Fill sushi with
spicy shrimp mix


These dishes were prepared by Troy Teruya of Catch of the Day Sushi on "Hawaii's Kitchen" this week. The show airs at 5:30 p.m. Sunday on KHON/Fox. All the recipes may be found on the Web site, khon.com

Shaka Spicy 'Choke' Shrimp Gunkan Sushi

1/3 cup sushi rice (see below)
1/3 sheet sushi nori, cut lengthwise
1 shrimp, cooked with tail on
1 teaspoon Spicy Shrimp Mix (see below)
2 teaspoons Shaka Sauce (see below)

Form rice into a ball. Wrap nori around the rice to form a cup and lay cooked shrimp inside. Fill with Spicy Shrimp Mix.

Spicy Shrimp Mix

1 cup butterflied shrimp
1-1/2 teaspoons sriracha (Thai chili sauce)
1/2 teaspoon shichimi (Japanese 7-spice red pepper mix)

Boil shrimp in water 3 to 5 minutes. Peel and chop. Combine with sriracha sauce and shichimi.

Shaka Sauce

1 cup mayonnaise (Best Foods preferred)
1 teaspoon masago (Japanese-style fish eggs)

Combine mayonnaise and masago.

Sushi Rice

1 cup rice vinegar
1/2 cup sugar
1/8 cup rock salt
4 to 5 cups cooked rice

Heat vinegar, sugar and rock salt, stirring to dissolve. Stir into hot rice and mix well.
