Ginger chicken
a local favorite


"The Electric Kitchen" airing in the first half of November features Walter Paulino of Tanioka's.

"Electric Kitchen" airs at 9:30 a.m. Sunday, 8 p.m. Monday, 5 p.m. Tuesday and 6 p.m. Thursday on Oceanic Cable Channel 16. It also airs on Maui at 8:30 p.m. Thursday on Calabash Channel 44 (52 in Lahaina) and on the Big Island at 5 p.m. Monday and 5:30 p.m. Wednesday on Na Leo o Hawaii Channel 55 in Hilo and Kona.

All the recipes from the show, as well as an archive of recipes dating to 1995, are available at the Hawaiian Electric Co. Web site, www.heco.com.

Cold Ginger Chicken

2-1/2 pounds boneless chicken thighs
1 tablespoon Hawaiian salt
Water
1-1/4 teaspoons salt
2 cups minced green onions
3/4 cup minced ginger root
1-1/2 cups olive oil

Place chicken in a pot with Hawaiian salt and enough water to cover. Cover pot, bring to a boil and cook 10 minutes or until done; drain.

While chicken is still hot, sprinkle with 3/4 teaspoon salt; chill.

To make sauce, combine green onions, ginger and remaining salt. Heat olive oil In a saucepan. Add ginger mixture; mix well. Remove from heat and chill.

Combine chicken and ginger mixture; mix well and chill until ready to serve. Serves 6.
