Meaty pasta dishes
hearty fare

ROSEMARIE Takemoto of Lanikai asked for a recipe for a ground beef, macaroni and tomato sauce dish.

The simple skillet goulash is from "Easy Recipes for 1, 2 or a Few" by Anna Aughenbaugh (Starlite, 1994). Order by calling 1-(303)-493-7969. The baked pasta recipe is from the "American Buffet" cookbook by the General Federation of Women's Clubs (1993), available at 1-(800)-358 0560.


Goulash

1 pound hamburger
1 large onion, chopped
1/2 cup macaroni
2 cups canned tomatoes
1 cup kidney beans, drained
Dash pepper

In a medium skillet, brown hamburger and onion; drain. In a large saucepan, cook macaroni until almost tender. In same saucepan, mix macaroni, hamburger, tomatoes, beans and pepper. Simmer 30 minutes. Makes 4 servings.

Beefy Baked Pasta Family-Style

2 tablespoons olive oil
3 cloves garlic, pressed
1 pound coarsely ground lean beef
3/4 cup spaghetti sauce
3/4 cup brown gravy
1/2 cup half-and-half
1/4 cup Parmesan cheese
1 teaspoon whole oregano
1/2 teaspoon whole rosemary
Salt and pepper to taste
12 ounces uncooked pasta, such as macaroni or penne
1 cup shredded mozzarella cheese

In olive oil in a large skillet, brown garlic and ground beef, stirring until crumbly; drain. Add remaining ingredients except pasta and mozzarella. Mix well and simmer several minutes.

Cook pasta in boiling water until just tender; drain. Add to ground beef mixture; mix well. Spoon into 3-quart baking dish. Top with mozzarella. Bake at 350 degrees for 25 minutes or until bubbly. Makes 6 servings.
