Event to benefit culinary institute

Three top Hawaii chefs — Vikram Garg, Roy Yamaguchi and Alan Wong — share the spotlight with Kathryn Hall of HALL Wines of Napa Valley, Dean Okimoto of Nalo Farms and the Hawaii Farm Bureau, and Chuck Furuya, master sommelier, at “;An Evening of Sustainable Cuisine”; at Halekulani Hotel's ballroom, 6:30 to 9:30 p.m. Jan. 8.

The event, which benefits the Culinary Institute of the Pacific at Diamond Head, includes bistro dining, sustainable wines by HALL, cocktails and entertainment.

Chef to teach 4 cooking classes

;  Chef Hiroshi Fukui of Hiroshi's Eurasion Tapas kicks off a new series of cooking classes at 6 p.m. Tuesday.

The first in the four-class series features “;How to Make Tempura and Japanese Dashi.”; Dashi is the base for the vast majority of Japanese sauces, tempura and stewed vegetables.

KCC picks team for competition

Following in the success of 2009 Team Hawaii's national championship at the American Culinary Federation's student competition, Kapiolani Community College announces its 2010 Team Hawaii.

Returnee Anna Hirano is joined by Kasey Watson, Erin Tsukamoto, Erik Kuo, Clifford Manansala and Lauren Hamai.

The group is preparing for a Western Regional Competition in New Mexico in early February under the guidance of chef Alan Tsuchiyama.

 

California wines focus of tasting
