Hearty meal honors Dad on his day
POSTED: Wednesday, June 17, 2009
Father's Day is Sunday—make Dad feel extra special by cooking up a tasty dinner just for him. A hearty meal of spinach salad, steak and chocolate dessert fit the bill perfectly.
It used to be that spinach salad was a chore to make—all that rinsing and cleaning of the leaves. But packages of pre-washed spinach available nowadays make preparation a snap. And the marinade for the Broiled Steak Siciliano makes a juicy, flavorful and tender steak Dad will love.
The dessert finale, Toffee Coffee Chocolate Dessert, is actually an ice cream pie that takes ice cream to the next level. Happy Father's Day to all dads, young and old!
Wilted Spinach Salad
2 pounds fresh, pre-rinsed spinach leaves
1/2 pound bacon, chopped
1/4 cup chopped onion
1 clove garlic, minced
2 teaspoons fresh or 1/4 teaspoon dried tarragon leaves
1/4 cup red wine vinegar
3/4 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon pepper
1/4 teaspoon paprika
2 hard-cooked eggs, chopped
Tear spinach leaves into bite-size pieces; discard stems. Place in large bowl.
Fry bacon until crisp; remove bacon, saving 1/4 cup drippings. Add onion, garlic and tarragon to drippings; cook until onion is clear. Stir in vinegar, salt, mustard, pepper and paprika. Bring to boil.
Pour over spinach. Toss to coat. Sprinkle with bacon and chopped eggs. Serves 6.
