RESTAURANT REPORT
Premium sake stars at Wong's celebration
Chef Alan Wong celebrates the 14th anniversary of his King Street restaurant with a Namazake Dinner, a celebration of spring crafted around premium sakes, on April 15.
Featured will be the seasonal release of namazake (unpasteurized) and namazume (pasteurized once) sakes from small producers in Japan.
Most common sake is usually diluted with water, pasteurized twice, then aged. These springtime sakes are released right after pressing and have not been diluted with water, which accents their flavor.
The menu includes Manoa Lettuce “;Ohitashi,”; Seafood Salad on Tofu Panna Cotta (with Kasumi Tsuru “;Yamahai Shiboritate Namazake Genshu”;); Big Island Farm-Raised Butterfish and Miso Pork (Shichi Hon Yari); Five-Spice Braised Duck (Wataribune “;Shiboritate Namazake Genshu”;); Maui Cattle Co. Beef and Coconut Butter-Poached Lobster (Taiheikai “;Shiboritate Namazake Genshu Nigori”;).
Cost is $135. Seatings from 5 to 10 p.m. Alan Wong's is at 1857 S. King St. Call 949-2526.
