DINING IN
Time to thaw the turkey

No way your turkey is going to get this bronzed and beautiful if it's still frozen solid on Thanksgiving morning.

It's time to think about thawing. The safest way to do this is simply to move the bird from freezer to refrigerator. Clear a space (no small trick, we understand) and place the turkey in a tray or on top of several layers of towels. Don't unwrap it, but if you need to rush the process, it helps to remove the giblet packet as soon as you can loosen it from inside the cavity. Allow five hours per pound. So if your bird is 15 pounds or bigger, it had better be in the fridge TODAY. If you have a smaller turkey, tomorrow's OK.

Check Wednesday's Food section for last-minute cooking tips.
