Sugarless dressing tasty on salad

LAST WEEK we shared two tasty salad recipes; this week we're back with a couple more.
We like this recipe for tofu salad because the dressing is easy to prepare and, unlike many other tofu salad dressing recipes we've seen, this one contains no sugar -- good for those watching their sugar intake.
The Chinese Vegetable Salad has instructions for preparing reduced-fat wonton chips for the garnish that are just as tasty as the fried version.
Tofu Salad
1 block (20 ounces) firm tofu, drained and cubed
1 can (1 pound) salmon, drained and flaked
1 large tomato, diced
1 small onion, chopped
1 package (12 ounces) bean sprouts
1 bunch watercress, cut into 1 1/2-inch pieces
1/4 cup chopped green onion
» Dressing:
2 tablespoons salad oil
1 clove garlic, minced
1/2 cup soy sauce
To make dressing: In a small skillet, combine oil and garlic.
Cook on medium heat until garlic is lightly and evenly browned.
Cool, then add soy sauce.
Layer salad ingredients on a large platter.
Just before serving, pour dressing over salad. Serves 8.
Approximate nutritional analysis, per serving: 250 calories, 13 g total fat, 2 g saturated fat, 20 mg cholesterol, 1,200 mg sodium, 8 g carbohydrate, 2 g fiber, 3 g sugar, 26 g protein.
Chinese Vegetable Salad
2 quarts torn salad greens
1/3 cup chopped green onions
1/2 cup chopped Chinese parsley
1 can (8 ounces) water chestnuts, sliced
1/4 pound char siu, slivered
1/4 cup toasted sesame seeds
» Wonton chips:
1/2 package (10-ounce size) wonton wrappers
Vegetable oil spray
Garlic powder
Put vegetables and water chestnuts into a large salad bowl; cover and chill.
Preheat oven to 400 degrees.
Slice wonton wrappers into strips and spread on baking sheet.
Spray with vegetable oil spray and sprinkle with garlic powder.
Bake 5 minutes or until brown and crisp.
Just before serving, add wonton, char siu and sesame seeds to salad; toss gently.
Serve with Sesame Hoi Sin Dressing (recipe follows). Serves 10.

Sesame Hoi Sin Dressing
1/3 cup sesame oil
2 tablespoons hoi sin sauce
1/4 cup catsup
2 tablespoons apple cider vinegar
1/4 cup sugar
1 teaspoon salt
Combine all ingredients and mix well. Makes 1 cup.
Approximate nutritional analysis, per 2 tablespoon serving: 120 calories, 9 g fat total, 1.5 g saturated fat, 430 mg sodium, 10 g carbohydrate, 9 g sugar, no cholesterol, fiber or protein.
