Kids will love
frosty drinks
this summer
It's hot out there. Major hot. Plus the kids are home and they're bored and thirsty all the time.
Some cooling, juicy solutions come courtesy of the "Maui 4-H Cookbook," sent in by Esther Yap, 4-H program assistant with the Kahului Cooperative Extension Service.
Drinks are an overlooked part of most community cookbooks, but this one has three pages of ideas, from a mocha milkshake to Witches Brew, a Halloweeny-colored bowl of bubbly punch. Of course, the book contains lots of other recipe ideas as well (the dessert section is the biggest). They're kid-friendly recipes, as they come mainly from young 4-H members themselves.
The cookbook is available by mail for $10, plus $4 postage. Write: Maui 4-H Organization, care of Kahului CES Office, 310 Kaahumanu Ave., Building 214, Kahului, Maui, 96732. Make checks payable to "4-H Cookbook Account."
Proceeds support 4-H programs that serve more than 300 Maui youths.
This copycat recipe for an Orange Julius sneaks milk into your kids along with fruit juice. It can be made with any flavor of juice, just make sure it's pure juice with no sugar added. I used an orange-pineapple-strawberry blend because it was on sale.
Note that the original called for 1/2 cup of sugar, but I thought it was sweet enough with half that amount. You can make your own adjustments.
Orange Julius
1/3 cup frozen orange juice concentrate
1/2 cup milk
1/2 cup water
1/4 cup sugar
1/2 teaspoon vanilla
5 to 6 ice cubes
Combine ingredients in a blender; blend until smooth. Serves 2.
Approximate nutritional analysis per serving: 210 calories, 2 g total fat, 1.5 g saturated fat, 10 mg cholesterol, 35 mg sodium, 46 g carbohydrates, no fiber, 45 g sugar, 3 g protein.
Note: To make this drink for a crowd, use equal parts juice concentrate, milk, water and crushed ice (use the juice can for easiest measuring). Add half as much sugar, then vanilla to taste. Blend and taste. Add more of whatever's missing.
Golden Glow Punch
1 6-ounce can frozen orange-pineapple concentrate, thawed
1 3-ounce package orange-flavored gelatin
4 cups apple juice
3-1/2 cups ginger ale
Combine ingredients. Makes about 2 quarts. Serves 8.
Approximate nutritional analysis per serving: 170 calories, no fat or cholesterol, 40 mg sodium, 43 g carbohydrates, no fiber, 42 g sugar, 1 g protein.
