Ramen gets
gourmet treatment
This dish was prepared by D.K. Kodama of the Sansei restaurants on "Hawaii's Kitchen" Sunday. The show airs at 5:30 p.m. on KHON/FOX. All the recipes are available at

Dungeness Crab Ramen
5 ounces dry ramen noodles
1 cup pork broth
1 teaspoon hondashi (Japanese soup base powder)
2 tablespoons soy sauce
2 tablespoons butter (truffle butter, if possible)
Pinch salt and pepper
2 ounces Dungeness crab meat
1 teaspoon jalapeño peppers
1 tablespoon chopped Thai basil
1 tablespoon finely shredded cilantro
1 teaspoon white truffle oil
Boil ramen until al dente; drain and place in bowl.
Bring broth, soy sauce and hondashi to boil. Stir in butter; add salt and pepper.
Place crab meat and peppers over ramen. Add broth. Garnish with basil, cilantro and truffle oil. Serves 1.
