Sweet greensThis Okinawan dish of sweet potato leaves was prepared by Ellen Higa and Bobbi Kuba of Hui O Laulima on "The Electric Kitchen" Sunday. Kandaba Jushi1-1/2 cups rice7 cups water 1 tablespoon dashi no moto (Japanese soup base) 1 teaspoon salt 1/3 cup soy sauce 10 to 12 cups (packed) sweet potato leaves (or fresh spinach) Cover and simmer 1 hour, stirring occasionally, until rice is very soft. Serves 10 to12.
Nutritional information unavailable. Note: Canned tuna or boiled, diced pork may be added, using pork stock to replace part of the water. Canned chicken broth may also be used. Fuchiba (mugwort) may be added.
