Timbo's Favorite Salmon Dinner1/2 onion, chopped1 tablespoon margarine 1 large can cream of mushroom soup 1/2 can milk (using the empty soup can) 1 large can red salmon, drained 1 tablespoon fresh or dried parsley flakes Salt and pepper, to taste Simmer on low heat 20 minutes. Stir and serve.
Manicotti1 pound ground beef2 cloves garlic, minced 8 ounces mozzarella cheese 2 cups cottage cheese 1 package frozen chopped spinach, thawed and drained 2 tablespoons dried parsley 14 to 16 large manicotti noodles 28 to 32 ounces prepared spaghetti sauce 1/2 cup Parmesan cheese Brown beef in frying pan with garlic. Drain. Grate mozzarella into a bowl. Add cottage cheese, spinach, parsley and half the parmesan cheese. Mix in browned beef. Stuff each noodle with meat mixture. Place in a single layer in baking dish. Cover with spaghetti sauce; sprinkle with remaining Parmesan cheese. Cover pan with foil and bake 45 minutes. Remove foil and bake another 15 minutes. Cool for 15 minutes before serving.
