Short attention span eater! You've heard writers describe foods as being as "light as air," but a few years ago, fabled Spanish chef Ferran Adriˆ actually began selling air and foam on a plate.
I didn't have the cash to get to Spain. Luckily, Adriˆ's experiments caught chef Hiroshi Fukui's attention, too, and he's started injecting his own flavor-saturated sauces with carbon dioxide. For those who flunked high school science, CO2 is chemical compound slightly heavier than air which is water soluble and nontoxic.
The burst of CO2 means resulting foam is light on the tongue -- meaning less weight and calories for dieters -- but packed with the essences of roasted garlic, cilantro or Caesar salad dressing. Try it with the Dip'n Eat Caesar ($6.75), Hiroshi's signature soup, or pan-roasted shrimp with sugared snap peas and shiitake (pictured above).
So much for future food shortages. All we'll need are rice crackers dipped in flavored foam.

As a lifelong music hound, I wish I was a clone Friday night, so one of me could head for The Doors of the 21st Century at Pipeline Cafe, while the other bops along with Deerhoof at Indigo. I've been a Doors fan since hearing "Light My Fire," one of the greatest rock paeans to love/lust ever. And Deerhoof has become one of my favorite bands since seeing them at the 2003 All Tomorrow's Parties in Long Beach, Calif. Their quick shifts between pop and noise during any song never sounds false to me. What I'm saying is, depending on your mood, you can't go wrong with either band.

I told you to save your money last weekend. On Friday, there's a whole lot going on downtown with the First Friday art walk and On the Spot performing at The ARTS at Marks Garage. Then, get an early start Saturday for the Cherry Blossom Heritage Fair and Kamehameha Schools' Ho'olaule'a. Stop off at home to shower and get a bite to eat before attending "Swoop, Tumble, Fly: The Art of Motion" at UH. And, finally, close out the weekend with St. Louis School's production of "Aida" at Mamiya Theatre.
