This dish was prepared by Roy Yamaguchi of Roy's restaurants on "Hawaii's Kitchen" Sunday, on an episode marking the launch of the Get Healthy Now Hawaii educational campaign. The show airs at 5:30 p.m. on KHON/Fox.
Whole Wheat Pizza
» Dough:
3/4 teaspoon active dry yeast
3/4 cup lukewarm water (105 to 110 degrees)
1 tablespoon honey
1 cup whole wheat flour
1 to 1-1/2 cups bread flour
Pinch salt
2 tablespoons olive oil
» Toppings:
1 cup low fat mozzarella cheese
1 cup tomato sauce, optional
» Healthy optional toppings:
Cooked shredded chicken breasts
Blanched broccoli florets
Sautéed mushrooms
Black olives
Caramelized onions
Pineapple chunks
Sprinkle yeast over water in a bowl, whisk in honey and let stand 5 minutes.
Lightly oil a large bowl and add whole wheat flour, 1 cup bread flour and salt. Beat on very low speed. Slowly add water and yeast mixture. Continue beating until dough is well-mixed.
Increase speed to medium and add olive oil. Beat 4 to 5 minutes, until dough looks smooth and satiny and forms a ball. Add remaining flour if necessary. Place in clean, lightly oiled bowl, cover and let rise 45 minutes.
On a large, floured surface, divide dough into 4 equal portions. Knead quickly into 4 balls. Cover and let rise another 15 minutes.
Roll out 1 portion of dough into a 7-inch circle. Spread with tomato sauce and your choice of toppings; sprinkle with cheese.
Preheat oven to 425 degrees.
Place pizza on pan or baking stone (stones should be preheated at least 45 minutes) and bake 5 to 7 minutes or until golden brown around edges.
