Veggies, onaga
steam together

This dish was prepared by George Gomes and Maka Wong of Aaron's Atop the Ala Moana Hotel on "Hawaii's Kitchen" Sunday. The show airs at 5:30 p.m. on KHON/Fox.

Steamed Onaga

6 ounces fresh onaga
1 stalk green onion
1 baby bok choy
1 king alii mushroom
1 baby daikon
Pesto topping (recipe follows)
Toasted nori vinaigrette (recipe follows)
Peanut oil

Line a steamer basket with ti leaves. Place onaga and vegetables in basket. Steam over boiling water 8 minutes. Arrange fish and vegetables on a plate and top with pesto topping and nori vinaigrette.

Heat peanut oil in a small pot and pour over fish.

Pesto Topping: Combine shredded ginger, chopped green onion, peanut oil (quantities to taste) and pinch of salt.

Toasted Nori Vinaigrette: Toast a piece of nori in a dry skillet. Combine soy sauce, sesame oil and sugar (quantities to taste). Break nori into pieces and add to mixture.
