Chef shuffle
Hiroshi Fukui, chef at L'Uraku, is leaving the contemporary Japanese restaurant in order to open a new restaurant with master sommelier Chuck Furuya and D.K. Kodama, chef/owner of Sansei Seafood Restaurant and Sushi Bar.
Fukui opened L'Uraku in 1996 and along with Kodama has been recognized as a trailblazer in the field of "new-wave" Japanese cuisine.
Plans for the new restaurant have yet to be announced, but the venture will not be another Sansei, Furuya said. Kodama currently operates a Sansei at Restaurant Row and is opening a second Oahu restaurant in Waikiki. He also owns two Sansei restaurants on Maui, plus Vino, an Italian restaurant/wine bar.
Cooking classes
These classes are coming up next month at Kapiolani Community College. To enroll, call 734-9211. Registration runs three weeks in advance.
Learning to Luau: KCC alumnus Jason Ganzagan explains how to make kalua pig, lomi salmon and laulau at home, 6 to 9 p.m. Aug. 4. Cost is $45.
Pasta!: Chef Keoni Chang teaches how to make pasta from scratch, how to pick the right sauce for the right noodle and how to create a variety of sauces, 8 a.m. to noon Aug. 7. Cost is $45.
Cooking competitions

Build A Better Burger: Sutter Home Family Vineyards is offering a grand prize of $50,000 for the best beef burger recipe. Deadline for entries is Aug. 31. Ten regional finalists will be flown to Napa Valley, Calif., in October for a cook-off. Search for America's Favorite Side Dish: KFC is seeking recipes for dishes to be served along with fried chicken (no desserts). Top prize is $5,000, and the dish will be served at a local KFC.
