A quail egg with your Spam?
The humble combination of Spam and eggs got the upscale treatment at New York's Culinary Institute of America when Emilee Kaiulani Greer turned to Spam in answer to a class assignment themed "Childhood Memories."
Although she hails from Athens, Ga., Greer picked up a taste for Spam, eggs and rice from her father and grandmother, Daniel and Winona "Nona" Leina'ala Greer, formerly of Honolulu.
Her description of the dish: "I made a rice cake, coated it with panko and deep fried it, then a circle-cut piece of fried Spam, then a poached quail egg on top. On top, a sprinkle of Kosher salt, fresh ground black pepper and micro-chives cut from my herb garden."
Such creative thinking paid off -- Greet graduated valedictorian of her class of 75 students.
This information passed on by her proud uncle, Dr. Mark H.K. Greer, chief of the Dental Health Division of the Hawaii State Department of Health.
"Hormel," Dr. Greer says, "would be proud."
Keeping it fresh
Kaiser Permanente's Honolulu Clinic is holding a weekly open market selling local produce.
The Fresh Fridays markets run 10 a.m. to 2 p.m. at the clinic's main entrance and front lawn, at the corner of Pensacola and King streets. The markets are open to the public.
The clinic will also offer educational information on living healthy and on select Fridays will sponsor cooking demonstrations.
Green cuisine
Linda Day of the Sustainability Office of the University of Hawaii-Manoa will speak on "Green Cuisine: What You Eat Can Save the World" at the July meeting of the Vegetarian Society of Hawaii.
The free lectures will be held at 7 p.m. Saturday at the Seventh-Day Adventist Church in Kahului, Maui, and 7 p.m. next Wednesday at Central Union Church in Honolulu.
Day has long been involved in environmental, animal rights and human health issues. As communications coordinator for the Office of Sustainability, she helped open Ono Pono, a vegetarian café on the Manoa campus.
The focus of her talk will be on how an individual's diet can be modified to reduce the strain on the environment.

Kaukau competition
Nine competitors face off in a cook-off at Sunday's Kaukau Challenge at the Mai Tai Bar at Ala Moana Center.
The finalists are in the running for more than $10,000 in prizes, including a trip to Napa Valley, Calif.
All their dishes will be available on a special menu during the event and the Mai Tai Bar will donate 20 percent of sales to Ronald McDonald House Hawai'i.
KCCN-FM's Shannon Scott and former Miss Hawai'i USA Alicia Michioka Jones will host the competition, which begins at 3 p.m.
The first-place recipes in each category -- soups/salads, pupus/entrées and desserts -- will be added to the Mai Tai Bar's menu.
Be a wiener winner
Oscar Meyer is sending its Wienermobile out to 50 sites this fall, in reward for the 50 most creative "Oh I Wish" entries. The rolling replica of a sausage comes with up to $5,000 to make a wiener wish come true.
