Sausage stuffing fills uhu


Dishes prepared by Shane Sumarnap on "Hawaii's Kitchen" Sunday. The show airs at 5:30 p.m. on KHON/Fox.

Stuffed Uhu

1 whole uhu
4 tablespoons Hawaiian salt
3 cloves garlic, chopped
2 teaspoons black pepper
2-1/2 cups mayonnaise
>> Stuffing:
1/2 cup sliced ginger
2 cups sliced onion
2 cups sliced tomatoes
6 stalks green onion
4 cups sliced Portuguese sausage

Preheat oven to 375 degrees. Line a baking pan with 4 large green ti leaves.

Rub fish with Hawaiian salt and season with garlic and pepper. Coat both sides with mayonnaise.

Combine stuffing ingredients and stuff uhu. Place on ti leaves; cover with foil. Bake 45 minutes.

He'eia Salad

1 pound limu (seaweed)
1 pound fern shoots
4 medium tomatoes
1 to 2 sweet onions
1 cup EACH soy sauce, vinegar and patis (fish sauce)

Blanch limu and fern shoots. Slice to desired size. Combine with remaining ingredients; chill.
