Cajun flavors
spice up ahi


This dish was prepared by Jean-Pierre Maharibatcha of John Dominis Restaurant on "Hawaii's Kitchen" Sunday. The show airs at 5:30 p.m. on KHON/Fox.

Seared Blackened Ahi Cajun Style

1 pound ahi fillet
2 tablespoons Cajun spices
Sliced cucumbers
1 daikon, peeled and finely julienned
Radish sprouts, for garnish
>> Sauce:
1/2 cup Dijon mustard
1/3 cup soy sauce
1/3 cup beer

Preheat frying pan to very high heat. Sprinkle fish with Cajun spices. Sauté fish (dry, without oil) 1 minute on each side. Slice fish into 1-ounce medallions (like sashimi).

Pour sauce ingredients in a blender and blend.

Pour sauce on individual plates. Arrange cucumber slices over sauce. Top with fish medallions and garnish with daikon and radish sprouts.
