Baked salmon
a family affair
These dishes were prepared by Patricia Rodriguez on "The Electric Kitchen" Sunday, an episode called "Cooking is a Family Affair." The program airs at 4:30 p.m. on KITV/ABC.

Baked Salmon
1-1/4 to 2-pound center cut salmon fillet
1 tablespoon lemon pepper seasoning
1 teaspoon garlic powder or 2 cloves garlic, crushed
1/2 teaspoon salt
1 cup mayonnaise
1 tablespoon finely chopped fresh dill (or 1 teaspoon dried)
1/2 cup finely grated fresh Parmesan cheese
Lemon wedges for garnish
Preheat oven to 400 degrees. Line a large baking pan with foil; spray with vegetable oil. Place salmon, skin side down, in prepared pan. Sprinkle with lemon pepper, garlic and salt; rub seasonings into salmon.
Combine dill and mayonnaise in a small bowl; spread over salmon. Sprinkle Parmesan cheese over salmon. Bake, uncovered, about 20 minutes or until just opaque in center and golden brown on the surface. Garnish with lemon wedges. Serves 4.
Apple Dapple Cake
2 cups sugar
3 eggs
1-1/2 cups vegetable oil
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 cups chopped apples (about 3 apples)
2 cup chopped pecans, optional
2 teaspoons vanilla
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
>> Caramel Sauce:
1 cup butter
2 cups light brown sugar
1 cup heavy cream
Preheat oven to 350 degrees. Grease and flour a 9-inch bundt pan.
In a large bowl, using an electric mixer, cream sugar, eggs and oil. Mix in remaining ingredients. Pour batter into prepared pan; bake 1 hour.
To make sauce: Melt butter in a small saucepan; add sugar and bring to a boil. Cook for 2 to 3 minutes, until sugar is dissolved. Remove from heat and stir in cream. Makes about 3 cups.
Serve each piece of cake with Caramel Sauce. Serves 12.
