Sixteen chefs participated in a cook-off at the HFM Food Service Annual Buying Show held at the Blaisdell Exhibition Hall last week. Judges Rene J. Marquis, a culinary educator for the Army, left; Gordon Lum, executive chef at Makaha Resort, and Van P. Atkins, corporate executive chef for Custom Food Products, evaluated the chefs' efforts at turning a mystery basket of foods into a meal. The event raised $5,000 for culinary scholarships. First prize went to Jay Matsukawa of the Willows, second to Steve Brown of Diamond Head Market and Grill, third to Kevin Nakata of Aaron's and fourth to Vincent Logan of the Wailea Marriott Resort on Maui.



Culinary champs

The Kapiolani Community College team of student chefs has won the title of state champs and will represent Hawaii in a regional culinary competition at Colorado Springs, Colo.

All they need now is $15,000 to make the trip.

The KCC team -- Lorin Jitchaku, Kerwin Wells, Tiffanie Luke, Jason Jutz and Bobby Sohns -- bested the Maui Community College team at the American Culinary Federation Food show held Sept. 12 at the Hilton Waikoloa on the Big Island, the team's instructor, Daniel Swift, said.

Each team prepared a four-course meal in 90 minutes, for evaluation on taste, presentation, nutritional value and preparation skill. The students were also tested individually on their knife technique.

The winning menu incorporated local produce and seafood, built around an entree of Fennel-Crusted Hawaii-Raised Rack of Pork.

The regional competition will be held in February. The team is planning a fund-raising dinner for Feb. 2, to feature its competition menu.

Market Day

The Saturday Farmers' Market at Kapiolani Community College enters its third week on Saturday.

Organizers reported a larger-than-expected crowd on opening weekend Sept. 13, with shoppers in line before the opening horn sounded at 8 a.m. and many vendors selling out early. But things settled down last week to a better balance of supply and demand.

This week, expect to find avocados, wing beans, Waimanalo sweet corn and papayas from the Big Island and Kahuku. Tropic Fish will sell Kauai Shrimp and moi.

Chef Russell Siu of Kakaako Kitchen will serve breakfast, including Kakaako Kitchen Fried Rice with Scrambled Eggs and Char Siu Chicken Egg Food Yong.

The market is open 8 a.m. to noon. Call 848-2074.

Cooking classes

A Sweet Taste of Chef Mavro Restaurant: Susan Gilhooly, pastry chef at Chef Mavro, will demonstrate how to make Hawaiian Vanilla Cheesecake, Warm Apple Caramel and Apple Crisp, 9:30 to 11:30 a.m. Saturday at the Lyon Arboretum. Cost is $28; $25 for arboretum members. Call 988-0456.

Cooking French: Chef Nina Jarrett, graduate of Le Cordon Bleu in Paris, leads classes in French cuisine on three consecutive Mondays at Kapiolani Community College. Classes begin Oct. 6 with soups, continuing Oct. 13 with entrées and Oct. 20 with holiday desserts. All classes are 6 to 9 p.m. and cost $55 each. Call 734-9211.
