Spicy shrimp
makes tasty sushi


This dish was prepared by Troy Teruya of Catch of the Day Sushi on "Hawaii's Kitchen" Sunday, a rebroadcast of the April 14 show. The show airs at 5:30 p.m. on KHON/Fox.

Shaka Spicy 'Choke'
Shrimp Gunkan Sushi

1/3 cup sushi rice (recipe follows)
1/3 sheet nori, cut in half lengthwise
1 shrimp with tail, cooked
1 teaspoon Spicy Shrimp Mix (recipe follows)
2 teaspoons Shaka Sauce (recipe follows)

Mold sushi rice into a ball. Wrap with nori to form a cup and place cooked shrimp inside cup. Fill with Spicy Shrimp mix and top with Shaka Sauce. Serves 1.

Spicy Shrimp Mix

1 cup butterflied shrimp
1-1/2 teaspoon sriracha (Thai chile sauce)
1/2 teaspoon shichimi (Japanese seven-spice)

Boil shrimp in hot water 3 to 5 minutes. Peel and chop. Combine with sriracha and shichimi.

Shaka Sauce

1 cup mayonnaise
1 teaspoon masago (fish eggs)
Mix together mayonnaise and masago.

Sushi Rice

1 cup rice vinegar
1/2 cup sugar
1/8 cup rock salt
4 to 5 cups cooked rice

Heat vinegar, sugar and rock salt, stirring to dissolve. Stir into hot rice and mix well.
