Try pork cooked
in a clay pot
"The Electric Kitchen" airing in the second half of July features Vietnamese Cooking with Jennifer Nguyen and Long Van Nguyen of A Saigon Café on Maui.
"Electric Kitchen" airs at 9:30 a.m. Sunday, 8 p.m. Monday, 5:30 p.m. Tuesday and 5:30 p.m. Thursday on Oceanic Cable Channel 16.

Pork Cooked in a Clay Pot
1 pound pork loin or pork butt, cut into 1 to 2-inch strips
Salt to taste
Water to cover
1 tablespoon vegetable oil
4 cloves garlic, crushed
6 medium shallots or red pearl onion, sliced
4 to 5 tablespoons fish sauce
4 teaspoons sugar
1 teaspoon black soy sauce
1 tablespoon black pepper
Green onions and black pepper, for garnish
Put pork in a bowl. Sprinkle with a little salt; cover with water. Let stand about 2 minutes; rinse and drain.
Place pork in a pot, cover with water and bring to a boil; drain.
Heat oil in a clay pot (use only a clay pot that is safe for range-top cooking or use a regular saucepot). Sauté garlic and shallots until golden brown. Add fish sauce, sugar, black soy sauce, pepper and pork. Bring to a boil; lower heat and cook until pork is done.
Garnish with green onions and a sprinkle of pepper. Serve with steamed head cabbage or a green salad. Serves 2.
