"Electric Kitchen" airs at 9:30 a.m. Sunday, 8 p.m. Monday, 5:30 p.m. Tuesday and 5:30 p.m. Thursday on Oceanic Cable Channel 16.

Mango Quesadillas 2 mangoes, peeled and thinly sliced
8 ounces mozzarella cheese, shredded
8 ounces brie cheese, sliced
8 (8-inch size) flour tortillas
>> Mango Salsa:
2 firm mangoes, cubed
1/2 cup diced red onion
2 tablespoons chopped garlic
1/2 cup chopped cilantro
Juice of 2 limes
1 red bell pepper, diced
1 yellow bell pepper, diced
Salt and pepper to taste
To make salsa: Combine all ingredients in a bowl; chill for 1 hour before serving.
To assemble quesadillas: Place equal parts of mango, cheese and brie on 1/2 of each tortilla. Fold each tortilla in half. Heat a non-stick skillet over medium-high heat and grill each quesadilla 2 minutes on each side. Serve warm with mango salsa.
