Dinner offers a
taste of Tuscany
The wines of Tuscany take center stage in a winemaker's dinner May 28 at Sergio's in the Hilton Hawaiian Village.
Alan Suzuki, regional manager of Robert Mondavi Family of Wines in Hawaii, will host "Heart of Tuscany."
Chef Matthew Johnson's menu: Fire-Roasted Three Pepper Salad (with Frescobaldi Brut), Steamed New Zealand Cockles in Habañero Chive Broth (Frescobaldi Pomino), Herb-Crusted Roasted Australian Lamb Rack (Nipozzano Chianti Rufina "Reserva" 1999 and Mondavi-Frescobaldi Lucente 1999), an Italian cheese course (Mondavi-Frescobaldi LUCE) and dessert of Strawberries in Balsamic Vinegar (La Familiglia Moscato 2001 and Luce Grappa).

Ferrari-Carano Winemaker's Dinner: A five-course dinner paired to the Ferrari-Carrano Northern California wines, 6 p.m. tomorrow at Kamuela Provision Company and Wine Bar in the Hilton Waikoloa Village. The menu: Kalua Clams, Kamuela Baby Greens with Teardrop Tomatoes (both served with 2001 Fume Blanc), Seared Opah (2001 Alexander Valley Chardonnay), Macadamia Pesto-Crusted Rack of Lamb (1999 Siena and 1997 Trésor Reserve) and a "Message in a Bottle" chocolate dessert (2000 Eldorado Noir).
