Dining around the islands
Culinary students at Leeward Community College are offering a full-on French dinner Friday night, and to prepare them for prime time they have a master, Michel Martin, who opened Hawaii's first French restaurant, Chez Michel, in 1942.
Martin, 96, also ran Michel's at the Colony Surf and Chez Michel at Eaton Square, and can still be found working at the Patisserie at Kahala Mall. He is to be inducted into the LCC Culinary Hall of Fame next month with a Lifetime Achievement Award, along with Swiss Inn chef Martin Wyss and longtime culinary instructor Jimmy Sueyoshi. Wyss will be helping in the ktichen at Friday's Hall of Fame Dinner.
The dinner will be prepared by advanced students, with details of presentation and service overseen by Martin. Some of his classic recipes will be used, including his famed onion soup.
The six-course menu also includes Escargots de Bourguignonne, Chateaubriand Grillé, Roast Duck a l'Orange, Salade Francaise and Chocolate Souffle. Wines paired to the dishes have been selected by master sommelier Chuck Furuya.
Seatings are from 5:30 to 9 p.m. in LCC's Pearl Restaurant. Cost is $60. Call 455-0475 or 455-0298.
