Garlic chicken
with a 4-H flair


For 30 years, the 4-H has challenged kids to get into the kitchen. This effort has resulted in a series of cookbooks that showcase recipes with local flair produced by 4-H-ers.

The just-released "Oahu 4-H Food Show Potpourri" includes a recipe that is a frequent and favorite request of readers of this column: garlic chicken. It was submitted by fourth-grader Sara Fukuhara of Clover Kids 4-H Club and Maemae School, based on her uncle's recipe.

The "Food Show" of the cookbook's title refers to the annual competition, in which the kids ages 9 to 19 submit pairs of dishes for judging. A look at this year's winners provides an idea of the variety on the pages within:

>> Top of Show awards went to Naupaka Hanchett (senior division) for Beef Sukiyaki/Lemon Cream Cheese Squares, Hannah Wong (intermediate division) for Summer Salad with Honey-Mustard Dressing/Fresh Strawberry Napoleon and Erin Nakatsuka (junior division) for Breakfast in a Cup/Peanut Soy Dressing.

>> Scholarships from Kraft Foods for recipes using that company's products went to Jana Yakushiji for Ono Crock Pot Stew/Taco Crisp and Dayna Park for Portuguese Sweet Bread Pudding/Portuguese Sausage Quiche.

Uncle Jon's Garlic Chicken

Vegetable oil for deep-frying
3 pounds boneless chicken thighs, cut in bite-sized pieces
Salt and pepper to taste
1 cup flour
>> Garlic Sauce:
1/3 cup soy sauce
1/3 cup sugar
1 tablespoon mirin
10 cloves garlic, minced
Dash togarashi (Japanese chile pepper powder)

Combine all sauce ingredients. Set aside.

Heat oil to 350 degrees.

Season chicken with salt and pepper. Place 1/3 of flour in a paper bag. Add 1/3 of the seasoned chicken. Shake. Fry pieces in hot oil until golden brown, then remove and shake off excess oil. Dip pieces in garlic sauce. Repeat with remaining flour and chicken. Serves 6.

Approximate nutritional analysis, per serving: (not including salt to taste): 750 calories, 50 g total fat, 12 g saturated fat, 190 mg cholesterol, greater than 1,000 mg sodium, 29 g carbohydrate, 43.5 g protein.
