By light of a full moon, enjoy sautéed foie gras on crispy potato pancake garnished with artichokes and served with truffle coulis, a timbale of scallops on a bed of risotto accented with Osetra caviar, two sautéed beef tournedos flavored with pinot noir shallot sauce, and champagne sorbet. Orchids: Halekulani's oceanside, open-air restaurant will start its Valentine's menu next Friday to Feb. 16 with a salad of baby lettuce, vine-ripened tomatoes and marinated fennel, or poached oysters and caviar butter; followed by beef tenderloin with truffled spinach pasta and shimeji mushrooms, or sautéed fish with a ragout of lump crab meat, haricots verts and lime and chervil butter, at $55 per person.
