Soak oxtail overnight in 2-1/2 cups of the wine.Red Wine Oxtail Stew
3 pounds oxtail
3-3/4 cups red wine
1 onion, sliced
2-1/2 cups beef stock
1 carrot, slicedThe next day, boil oxtail 20 minutes, then trim fat.
Sauté onions with oxtail; add remaining red wine, beef stock and carrots. Reduce heat and simmer 2-1/2 hours.
