Onion popper
dish is hot stuff


This dish was prepared by Rowena Felice, winner of the Maui Onion Festival recipe contest, on "Hawaii's Kitchen" this week. The show airs at 5:30 p.m. Sunday on KHON/Fox.

Maui Onion Poppers

2 large Maui onions
1 clove garlic, minced
1/2 cup chopped macadamia nuts
1/4 cup onion powder
1-1/2 cups panko
1/4 pineapple, chopped
2 tablespoons butter
1 teaspoon salt
2 egg whites
Vegetable oil for frying
>> Dipping Sauce
3 tablespoons cider vinegar
2 tablespoons pineapple juice
1 tablespoon lemon juice
1 teaspoon salt
1 teaspoon crushed pepper flakes, optional

Cut onions into thick slices; separate rings. Finely chop the largest ring to make about 1/2 cup. Mix with garlic, nuts, onion powder, 1/2 cup of the panko, pineapple, salt and butter. Stuff mixture into remaining onion rings.

Beat egg whites. Dip stuffed onion rings into egg and roll in remaining panko. Deep fry.

To make dipping sauce: Whisk ingredients together.
