Onion popper

Cut onions into thick slices; separate rings. Finely chop the largest ring to make about 1/2 cup. Mix with garlic, nuts, onion powder, 1/2 cup of the panko, pineapple, salt and butter. Stuff mixture into remaining onion rings.Maui Onion Poppers
2 large Maui onions
1 clove garlic, minced
1/2 cup chopped macadamia nuts
1/4 cup onion powder
1-1/2 cups panko
1/4 pineapple, chopped
2 tablespoons butter
1 teaspoon salt
2 egg whites
Vegetable oil for frying
>> Dipping Sauce
3 tablespoons cider vinegar
2 tablespoons pineapple juice
1 tablespoon lemon juice
1 teaspoon salt
1 teaspoon crushed pepper flakes, optionalBeat egg whites. Dip stuffed onion rings into egg and roll in remaining panko. Deep fry.
To make dipping sauce: Whisk ingredients together.
