Christmas Breakfast


"The Electric Kitchen" airing in the first half of December features Eleanora Cadinha of Portuguese Pioneer Civic Club with "A Portuguese Christmas Breakfast."

"Electric Kitchen" airs at 9:30 a.m. Sunday, 8 p.m. Monday, 5:30 p.m. Tuesday and 5:30 p.m. Thursday on Oceanic Cable Channel 16.

All the recipes from the show, as well as an archive of recipes dating to 1995, are available at the Hawaiian Electric Co. Web site, www.heco.com.

Portuguese Hash

2 tablespoons oil
2 (5-ounce) Portuguese sausages, diced
1 small onion, diced
6 russet potatoes, pared and cubed
1 tablespoon Hawaiian salt
1/4 teaspoon pepper
1 can (4 ounces) chopped green chiles
1/4 cup ketchup
2 tablespoons chopped parsley
4 eggs, beaten
3 tablespoons evaporated milk
Dash salt and pepper

Heat oil in a skillet. Brown sausage. Add onion; cook 1 minute. Add potatoes; cook until potatoes are tender, 15 to 20 minutes. Season with Hawaiian salt and the 1/4 teaspoon pepper. Add green chiles, ketchup and parsley.

In a bowl, combine eggs, milk, salt and pepper; mix well. Pour egg mixture over potato mixture and mix well. Cover and cook about 5 minutes. Serve hot. Serves 6.
