The Sansei shuffle

Chefs have been moving up the line and around the islands at Sansei Seafood Restaurant & Sushi Bar:

Tom Selman has been named corporate chef for the three-restaurant chain. He was executive chef at Sansei at Kihei, Maui, where he has been replaced by his sous chef, Eric Arbogast.

Ivan Pahk and Keith Endo have switched places, with Pahk now senior executive chef at the original Sansei at Kapalua, Maui, and Endo taking Pahk's position as executive chef on Oahu at Sansei in Restaurant Row.

In the No. 2 spots, Reis Llaneza is now sous chef at Kapalua and Bert Balbas is senior sous chef in Kihei.

Also on the move

Lyle Matsuoka has been named general manager of Auntie Pasto's original location on Beretania Street.

Matsuoka comes from a restaurant family. His father owned Little George's on Ala Moana, where Lyle started sweeping floors and washing dishes at age 13.

He is a graduate of Maryknoll High School and the University of Hawaii. He has worked at the Doubletree Alana Hotel and as manager at Furusato Japanese Restaurant and L'Uraku.
