jazz up fajitasThese dishes were prepared by jazz singer Loretta Ables on "Hawaii's Kitchen" this week, a rebroadcast of the Feb. 24 show. "Hawaii's Kitchen" airs at 5:30 p.m. Sunday on KHON/Fox. Here are a few of the dishes. All the recipes may be found on the Web site, khon.com.
Slice chicken breasts and place in a bowl. Add sugar, oregano, cayenne pepper, cinnamon and lime zest and juice.Chicken Fajitas
3 boneless skinless chicken breasts
2 teaspoons vegetable oil
1 medium onion
3 bell peppers (1 each red, green and yellow)
>> Marinade:
2 teaspoons sugar
2 teaspoons dried oregano
1/2 teaspoon cayenne pepper
1 teaspoon ground cinnamon
Zest and juice of 2 limesMarinate in refrigerator at least 15 minutes.
Heat oil in a skillet. Add chicken mixture and cook 5 minutes, stirring constantly. When chicken is cooked through, add bell peppers and onions and stir until cooked, but not overcooked.
Spoon mixture into warm tortillas and garnish with guacamole, salsa and sour cream if desired.
Heat oil in frying pan. Add potatoes and cook until tender. Squeeze chorizo from casings into frying pan. Cook and stir until blended. Add salt and pepper to taste.Chorizo Con Papas

5 medium potatoes, peeled, cut into bite-sized pieces
1 cup soft pork or beef chorizo
