Easy short-rib
stew hits the spot


These dishes were prepared by Sam Arakit and Joel Rosario of Kuhio Grille on "Hawaii's Kitchen" this week. The show airs at 5:30 p.m. Sunday on KHON/Fox. Here are a few of the dishes. All the recipes may be found on the Web site, khon.com.

Baked Short Rib Stew

5 pounds short ribs
3 carrots
2 onions
3 potatoes
1 package dry onion/mushroom soup mix
3 cans cream of mushroom soup
1 can tomato soup

Preheat oven to 375 degrees. Cut ribs and vegetables into bite-sized pieces. Combine all ingredients in a baking dish. Mix well and bake 3 to 4 hours, until vegetables are done.

One Pound Laulau

8 ounces taro leaves
4 ounces beef, cubed
2 ounces pork butt
1 ounce salted fish
Dash Hawaiian salt
Ti leaves

Stack taro leaves. Place meat and fish in center of leaves. Sprinkle with salt. Wrap leaves around meat, then wrap ti leaves around the bundle. Tie with string. Steam for 3 to 3-1/2 hours.
