Tobiko mayo
uplifts ahi burger

This dish was prepared by Norman Asao of the Honolulu Country Club on "Hawaii's Kitchen" this week. The show airs at 5:30 p.m. Sundays on KHON/Fox. All the recipes may be found on the Web site khon.com.

Ahi Patty Burger with Tobiko Mayonnaise

2 cups chopped ahi
1/3 cup Chinese fishcake
2 tablespoons shiitake, minced
2 tablespoons water chestnuts, chopped
1 tablespoon green onion, minced
1 tablespoon Chinese parsley, chopped
1 tablespoon soy sauce
1-1/2 tablespoons oyster sauce
1 tablespoon sesame oil
>> Tobiko Mayonnaise
1 tablespoon tobiko
2 tablespoons mayonnaise

To make mayonnaise: Combine tobiko with mayonnaise and refrigerate.

To make burgers: Combine ingredients and form into patties. Sauté in vegetable oil until medium-rare. Serve on toasted sesame hamburger bun, topped with Tobiko Mayonnaise and garnished with lettuce and sliced tomato.
