Dress salmon with tasty duo

Dishes prepared by Stu Schroeder and Ryan Day of Sunset Grill on "Hawaii's Kitchen" this week. The show airs at 5:30 p.m. Sunday on KHON/Fox.

Pan-Seared Salmon with Blue Crab Dressing

2 tablespoons olive oil
4 8-ounce cuts of Atlantic salmon
Salt and pepper to taste
>> Blue Crab Dressing:
1 teaspoon minced garlic
2 tablespoons diced tomato
1/4 cup panchetta bacon, cooked and chopped
1 cup blue crab meat
1 tablespoon balsamic vinegar
2 teaspoons red wine vinegar
1 teaspoon Dijon mustard
1/3 cup olive oil
Salt and pepper to taste

Heat olive oil in sauté pan. Sear salmon on both sides, reduce heat and cook to preferred doneness. Remove from pan.

To make dressing, add garlic, tomatoes, bacon and crab meat to pan, sauté lightly. Add vinegars and mustard. Stir together. Whisk in olive oil until emulsified. When heated through, pour over salmon. Garnish with chives.
