Unique fixings perk up rice

"The Electric Kitchen" airing in the second half of April features George Yoshida and "Cooking with Warabi."

"Electric Kitchen" airs at 9:30 a.m. Sunday, 8:30 p.m. Monday, 5 p.m. Tuesday and 6 p.m. Thursday on Oceanic Cable Channel 16. It also airs on Maui at 8:30 p.m. Thursday on Calabash Channel 44 (52 in Lahaina) and on the Big Island at 5 p.m. Monday and 5:30 p.m. Wednesday on Na Leo o Hawaii Channel 55 in Hilo and Kona.

Warabi Mixed Rice

20 stalks warabi (fern shoots)
5 dried shiitake mushrooms, soaked
1 tablespoon salad oil
5 dried shrimp, chopped
1 small carrot, minced
2 pieces aburage (fried bean curd), chopped
1 piece konnyaku (Japanese yam cake), finely sliced
1 block (7 ounces) kamaboko , slivered
1 can (6-1/2 ounces) minced clams, drained
1/4 cup soy sauce
1 heaping tablespoon brown sugar
Salt to taste
6 cups freshly cooked rice

Wash, clean and finely chop warabi. Remove stems from mushrooms; dice caps.

In a large skillet, heat oil. Sauté mushrooms, shrimp, carrot, aburage, konnyaku, kamaboko and clams. Combine soy sauce, sugar and salt; stir into the mixture. Simmer 5 minutes. Mix in warabi and rice; cook until heated. Serves 6.
