A mini-man made of chocolate is among creations
being sculpted by Kapiolani Community College
students for display at Kahala Mall. The students
are using potato peelers, brushes and other kitchen
utensils to carry out their artistic visions.

Chocolate sculptures, including a dragon, an underwater scene and a sailboat regatta, will be on display Friday through Feb. 13 at Kahala Mall.

Kapiolani Community College culinary students are sculpting the edible works in an intensive workshop led by chef-instructor Ernst Hiltbrand.

The works will be up for bid in a silent auction, 6 to 9 p.m. Feb. 13, to benefit HUGS, a support group for seriously ill children.

Cookbook for charity

Employees of the Kaua'i Marriott Resort & Beach Club are selling a cookbook to benefit several charities.

The "Associate Cook Book" is full of local-style recipes, most of them quick and easy, provided by resort employees.

The book sells for $10, to benefit the Associate Charity Fund, the Hawaii Hotel Association Visitor Industry Charity Walk, Kaua'i United Way and the Children's Miracle Network.

Only about 100 copies remain available, at the hotel's concierge desk. For mail orders call (800) 220-2925 or write the Kauai Marriott Resort and Beach Club, 3610 Rice Street, Lihue, Kauai 96766, Attention Andrew Newmark, director of human resources.

Mail orders cost an additional $2 to cover postage.

Salmon and Tofu Salad

1 block firm tofu, well-drained, in bite-sized cubes
1 large can salmon, drained and flaked
1 large tomato, diced
1 small Maui onion, diced
1/4 cup vegetable or peanut oil
1/4 cup soy sauce

Layer tofu, salmon, tomato and onion on a large platter. Refrigerate.

Just before serving, heat oil and soy sauce. Pour over platter. Serve immediately.

In search of heroes

On the Front Burner: The Royal Hawaiian Hotel's 75th birthday celebration continues with a cooking demonstration, 5:30 p.m. Saturday, featuring menu items from the anniversary gala last week. Chefs Alfred Cabacungan and Warren Uchida will prepare Pan-Roasted Hudson Valley Foie Gras, Broiled Beef Tenderloin and Australian Blue Shrimp and Hawaiian Kahlua Pot de Créme. KCC teaches the basics: Grant Sato teaches "Knife Skills and Basic Cutting Techniques, 8 a.m. Feb. 16. in Ohi'a Room 109, Kapiolani Community College. Daniel B. Swift teaches "Cookies," an introduction to basic types and the way they are made, on the same day and time in the KCC bake shop. Cost of either class is $35.
