It also airs on Maui at 8:30 p.m. Thursdays on Calabash Channel 44 (52 in Lahaina) and on the Big Island at 5 p.m. Mondays and 5:30 p.m. Wednesdays on Na Leo o Hawaii Channel 2 in Hilo and 14 in Kona.

For sauce: Combine bay leaf, shallot, wine, peppercorns and sugar; cook on medium heat until mixture is reduced to 2 tablespoons. Add cream and continue to cook until liquid is reduced to 1/3. Remove from heat and whisk in butter; add lilikoi juice and soy sauce.Seared Ahi
2 tablespoons olive oil
12 ounce block fresh ahi
1/4 cup shichimi (Japanese seven-spice)
1 small daikon, finely shredded
1 small carrot, finely shredded
>> Sauce:
1 bay leaf
1 shallot, sliced
1 cup white wine
6 whole peppercorns
1 teaspoon sugar
1 cup cream
1/4 pound unsalted butter, cut into pieces
1/4 cup fresh lilikoi (passion fruit) juice
Soy sauce to tasteTo prepare fish: In a skillet, heat olive oil. Coat ahi with shichimi and quickly sear on all sides. Thinly slice ahi. Serve ahi immediately with daikon, carrot and lilikoi-soy sauce. Serves 4.
