Slice Spam 1/4-inch thick and fry until golden brown. Cut into cubes. Mix the cheeses and spread half on the bottom of the pie crust. Place 1 cup Spam on top. Spread apples on top. Sprinkle with sugar and cinnamon. Add remaining cheese.Spam-Apple Quiche
12-ounce can Smoked Spam
1 cup shredded cheddar
1 cup Monterey Jack cheese
9-inch deep-dish pie crust
2 large Granny Smith apples, skinned and sliced thin
1 tablespoon sugar
1/2 teaspoon cinnamon
4 large eggs
1 cup half and half
1 tablespoon mustard powder
1 tablespoon Worcestershire
1/8 teaspoon garlic saltMix eggs and half and half in blender. Add mustard powder, Worcestershire and garlic salt. Pour egg mixture into piecrust and bake at 350 degrees, 45-55 minutes. Serves 6.
Soak beans in water overnight. Cook with salt until tender; rinse, drain and chill.Once Upon a Spam
1-1/2 cup dried black eye peas
1/2 cup dried Anasazi beans
1/2 large Maui onion, diced
1 mild red chile pepper, seeded and finely diced
Juice from 3 large lemons
2 tablespoons Thai fish sauce
2/3 can Spam
1 bunch mint, diced
2/3 bunch parsley, diced
5 or 6 romaine lettuce leaves
1 tomato wedge
3 cherry tomatoes
Pepper and sea salt, to tasteCombine onion, red chile pepper, lemon juice and Thai fish sauce in a bowl, stir and let it sit for about 1/2 hour.
Dice 2/3 can (more or less) Spam, fry until lightly browned, drain dry on paper towels and cool.
Combine beans, onion mixture, Spam, mint and parsley, toss well.
In a serving platter, lay out romaine and pour bean mixture artfully onto leaves to make a face. Use tomato wedge for a mouth and cherry tomatoes for eyes and nose. Add fresh ground black pepper and more ground sea salt to taste. Serve immediately.
