Papaya stars in pie
favored by Sen. Inouye"The Electric Kitchen" airing through the first half of March features Julia E. McCullen, former librarian at Lili'uokalani Elementary School, with recipes from the school's fund-raising cookbook, "History Comes Alive!"
Lili'uokalani students solicited recipes from government leaders nationwide for the collection.
"Electric Kitchen" airs at 9:30 a.m. Sundays, 8:30 p.m. Mondays, 5 p.m. Tuesdays and 6 p.m. Thursdays on Oceanic Cable Channel 16. It also airs on Maui at 8:30 p.m. Thursdays on Calabash Channel 44 (52 in Lahaina) and on the Big Island at 5 p.m. Mondays and 5:30 p.m. Wednesdays on Na Leo o Hawaii Channel 2 in Hilo and 14 in Kona.

Papaya Cheese Pie
2 firm-ripe papayas, peeled, halved and seeded
2 tablespoons cornstarch
2 8-ounce packages cream cheese
1/2 cup sugar
3 eggs
1 teaspoon grated lemon rind
9-inch unbaked pie shell
Kiwi slices
1/4 cup melted apple jelly
Mint sprigsPreheat oven to 375 degrees. In a blender, puree 1 papaya half; cut remaining 3 halves into 1/4-inch slices. Set aside.
Combine puree and cornstarch. Set aside.
Beat cream cheese and sugar with an electric mixer. Add eggs and lemon rind; beat until mixture is smooth. Add papaya puree and mix well.
Pour into pie shell and bake for 25 to 30 minutes. Cool.
Top with papaya and kiwi slices; brush fruit slices with jelly. Garnish pie with mint sprigs. Serves 8.
