Until last month, Troy's was Donato's Ristorante E Carpacceria, the business owned by Haley, but the high-priced Italian menu controlled by chef Donato Loperfido. Both partners came from Sarento's Top of the I.
After 18 months, the two parted ways in November due to professional differences, Haley said.
Mounting food costs had simply pushed prices too high, he said. "We started out as an affordable restaurant and grew into this fine-dining monster."
The Troy's kitchen will soon be taken over by James Rosenberry, former executive chef at Roy Yamaguchi's flagship restaurant in Hawaii Kai, Haley said. The new menu offers a variety of seafood and pasta -- "the prices are way better than before."
Troy's is open for dinner, 5:30 to 10 p.m. nightly, with happy hours and late-night menus Thursdays to Saturdays. Jazz entertainment is offered Fridays and Saturdays. For reservations call 738-5655.
Tomorrow's grand-opening cocktail party begins at 9 p.m. and is open to the public with complimentary food, wine tasting and a four-piece jazz band.
"I'm going to pack 'em in and open up the back door to stretch it out," Haley said.
