The recipe for pasteles is in the UPRAH cookbook.

Puerto Rican
festival Saturday

Celebrate the centennial of Puerto Rican immigration to Hawaii through a sampling of foods, music and dance at Windward Mall this weekend. Laura and Julia Robley will demonstrate recipes from the centennial cookbook, "From the Heart of Hawaii's Puerto Ricans." Tasting of pasteles will follow.

"A Taste of Puerto Rico," 11 a.m. to 4 p.m. Saturday is free and will include entertainment by Second Time Around Puerto Rican Band, Boricua Folkloric Dancers and Grupo Le'Lo'Lai. Call 235-1143.

The cookbook will be sold at the event. It is also available for $10, plus $3.50 postage, through The United Puerto Rican Association of Hawaii, 1249 N. School St., Honolulu, 96817. Call 847-2751.

An example of what you'll find in the book is this quick recipe for Mofongo, or Green Banana Balls: Peel 6 green Chinese or Williams bananas and halve lengthwise. Fry in 1 cup salad oil until tender. Mash. Fry 1/2 pound bacon until crisp; crumble and add to bananas along with 1 teaspoon garlic powder and 1/4 teaspoon salt. Form into 1-inch balls. Makes 3 dozen.

The significantly more complex pasteles recipe ran in the Star-Bulletin Dec. 15, 1999; a stewed codfish recipe on July 19, 2000. You can find them on our Web site, www. starbulletin.com (use the search function to find "Puerto Rican recipes).
