Reality TV for the
home cook

Jack Fujii's cooking classes go by the cryptic name of AG 194, but what they teach is reality cooking.

Fujii is dean of the College of Agriculture, Forestry and Natural Resource Management at the University of Hawaii at Hilo. The class he's been teaching for six semesters is called Focus on Agriculture and it brings in grassroots Big Island chefs to demonstrate ways of cooking local agricultural products.

They come from places like Kuhio Grille and the Hilo High School cafeteria and what they teach isn't fussy or complicated, but the kind of basic, local cooking that is easy to duplicate at home.

If you don't live in Hilo and can't attend the classes in person, you can still learn the lessons:

Bullet Watch on television, 7 p.m. Thursdays, Channel 55 on Oahu (21 in Hawaii Kai), 4 in East Hawaii, 13 in West Hawaii, 10 on Kauai or MCCTV on Maui.

The next round of classes runs Aug. 24 to Dec. 7. Tuition is $63. Registration ends tomorrow.

Expect guest instructors from Volcano Winery, Tex Drive In in Honokaa, Ken's House of Pancakes in Hilo, the Big Island County Fire Department and more.

As an example of what you'll get through the course or the cookbook, here's a recipe from one of last semester's classes, from Kay's Lunch Center:

HOT PEPPER PORK

2 pounds sliced pork, teriyaki cut

Bullet Marinade:
3/4 cup soy sauce
1/2 cup kochoo-jung sauce
4 cloves garlic, minced
1/2-inch piece ginger, grated
1/2 teaspoon black pepper
2 tablespoons toasted sesame seeds
2 tablespoons sesame oil
1 stalk green onion, chopped
1-2 green chile peppers, sliced
3/4 cup sugar

Combine marinade ingredients and pour over pork. marinate 1-2 hours. Char-broil or pan fry in oiled skillet until cooked through.
