Hawaii culinary students.



Chefs wait on students

They are learning the finer points of serving others, but today they will be served.

The 125 top culinary students from Hawaii's community colleges are to be recognized today at Kapiolani Community College, where they will be treated to lunch by a prominent group of local chefs.

The newly formed Hawaiian Island Chefs -- a group of eight chefs frequently among those listed as Hawaii's "rising stars" -- is sponsoring the private event.

The students are coming from community colleges on the Big Island, Maui, Kauai and Oahu.

"It's to say, 'Good job,' and there's a lot more out there," said D.K. Kodama of Sansei Seafood Restaurant and Sushi Bar, co-chairman of the chefs' group. The group's goal is to raise money for culinary scholarships. "Students who have real talent -- we don't want them to shy away from school because they can't afford it," Kodama said.

The chefs hope to keep the students focused on Hawaiian Regional Cuisine -- a culinary style that leans heavily on the use of local produce, Kodama said. "So when they get out they can work at an operation like L'Uraku or Alan Wong's or Roy's."

Bonann in the swim

"Baywatch Hawaii" producer-creator Greg Bonann has been named a 2000 Gold Medallion Award winner by the International Swimming Hall of Fame based in Fort Lauderdale, Fla.

The award is presented annually to a former competitive swimmer for his or her national or international achievement in the fields of science, entertainment, art, business, education or government. The recipient also must be someone whose life has served as an inspiration to youth.

Sam Freas, president and CEO of the International Swimming Hall of Fame, said "Baywatch Hawaii" has made "tremendous contributions" to aquatics. Bonann is dedicating "Baywatch Hawaii's" next season -- number 11 -- to a Learn to Swim Program through the production's Camp Baywatch.

"Only 25 percent of children living in Hawaii know how to swim," Bonann said.

Bonann hopes to have the Learn to Swim Program start in April, use the University of Hawaii swimming pool, Oahu lifeguards as instructors and enroll 500 children the first year.

As for whether "Baywatch Hawaii" will return for its 11th season that decision won't be made until later this month though Bonann is "very confidant" about the show's return.

Bullet Culinary scholarships: Chef Alan Wong and the Kappa Rotary Club have established a scholarship fund for students in the Culinary Arts Program at Leeward Community College.

The first two recipients of his $500 scholarships -- Sandy Downham and Alexander Caday -- were recognized at Wong's Pineapple Room restaurant last week. Both are studying for associate degrees in culinary arts.

Bullet Cuisine of the islands: Two chefs from the outer islands -- the way outer islands -- are stopping by Liberty House for a cooking demonstration this weekend.

Stephen Marquard, executive chef at the Outrigger Marshall Islands Resort, and Guy Hulin, executive chef at the Outrigger Hotel Tahiti, will appear on the fourth floor of the department store from noon to 2 p.m. Sunday.

Hulin is from France, while Marquard has extensive culinary ties to Hawaii. Both have taken an interest in incorporating foods of their islands, Marquard especially in his development of a Micronesian Regional Cuisine that uses breadfruit, pandanus and other native products.

Bullet Cooking with Herbs: Learn how to use savory herbs for healthy low-fat cooking. St. Francis Medical center is offering a class from 9-11 a.m. on Feb. 5. Call Leslie Ming at 678-7196 to register or for more information. Cost: $8.

Bullet Culinary Tours of France: Chef George Bouillon conducts classes exploring and noting the specialties of a variety of regions in France. "Culinary Tour: Bourgogne" on Feb. 13 will showcase wines and fine meats like Charolais. "Culinary Tour: Alsace Lorraine" will take place on Feb. 20 with dishes such as Chicken Reisling and Quiche Lorraine. And "Culinary Tour: Aquitaine" on Feb. 27 will highlight goose liver, cassoulets and special duck recipes.
