Young chefs-in-training have to practice on somebody. It may as well be you.

And if history is any indication, you're going to get a great meal out of the experience.

Kapiolani Community College once again is opening its dining rooms to the public, providing students with real-life experience cooking for and serving diners.

Your choices:

Bullet Continental cuisine at dinner in Ka Ikena Dining Room: Five-course meal for $19.95 to $21.95, depending on entree choice. Seatings at 5:30, 5:45 and 6 p.m.

Bullet Asian cuisine at dinner in the Tamarind Dining Room: Four courses for $19.95-$25.95. Seatings at 5:30, 5:45 and 6 p.m.

Bullet Continental cuisine at lunch in the Ka Ikena Dining Room: Three courses plus beverage for $12.95-$15.95. Seatings at 11 and 11:30 a.m. and noon.

Bullet Lunch in the Bistro: Upscale cafeteria-style dining at more moderate prices. Open 11 a.m. -1:30 p.m.

The dining rooms open today, except the Bistro, which opens Sept. 16. For reservations at any of the eateries call 734-9488.

For a taste of what's to come, consider these entree choices off the initial Ka Ikena dinner menu, available until Sept. 17: Baked Rainbow Trout with Shrimp Stuffing, Roast Carved Rack of Lamb with Cumberland Sauce, Napoleon of Sauteed Shrimp and Scallops in Sun-dried Tomato Sauce, Roast Cornish Game Hen with Sweet Potato Gratin, Braised Sweet Breads.

This follows an appetizer choice of Confit of Duck with Sauteed Leeks and Dried Cherry Marmalade or Sliced Home-Smoked Salmon with Creamed Apple and Horseradish.

Chef Kusuma Cooray, who presides over the Ka Ikena Dining Room, suggests dining at the beginning of the semester; reservations tend to get heavy later.
