The Third Floor was
Siggy’s place

To some it might have been the luxurious Third Floor Restaurant. To the customers, it was Siggy’s restaurant.

Siegfried M. Poesch’s to be correct, says Don Dickens, manager of the Hawaiian Regent Hotel.

Poesch, 57, longtime manager of Third Floor Restaurant, later called Secret, in the Hawaiian Regent, died Wednesday in Queen’s Hospital.

“Siggy was probably one of the finest restaurant managers I’ve known,” said Dickens, now vice president and general manager of the Mauna Lani Bay Hotel on the Big Island.

Poesch was with Third Floor/Secret some 20 years, opening the luxury Waikiki restaurant in 1972. It closed about two years ago. During its heyday, it was known for its strolling musicians who went from table to table entertaining guests.

“He had complete control of the restaurant and the staff,” Dickens said, adding Poesch provided intensive training for the staff every day.

Customers came first.

“He was always resistant to raising prices,” Dickens said.

“I remember the first time we raised prices after I got there. I literally had to force him to put them in,” Dickens said.

Poesch also worked at Hau Tree Lanai in the New Otani Kaimana Beach Hotel.

Born in Germany, Poesch is survived by his mother Ruth Poesch; brothers Wolfgang and Dieter; and sisters Rosemarie R. Cottle and Christiane Vergin.
