Cook pasta Longhi's way

Lahaina restaurateur Bob Longhi is long on Parmesan cheese.

"We use more than $200,000 worth of Parmigiano-Reggiano a year," says Longhi, whose Longhi's restaurant marks its 20th year Dec. 26.

Now the Italian native from New York state reveals nuances of four original pasta dishes, including classic Capellini with Tomato and Basil, Spaghetti Putana with 35 garlic cloves and feta cheese, Longhi's Quintessential Macaroni and Cheese with anchovies, and zesty Penne Arrabiata with chile peppers.

The recipes appear on a set of four prints hand tinted by his daughter, Gabrielle Longhi. A similar Longhi's recipe folder illustrated by Guy Buffet in 1978 has sold more than 10,000 copies.

An accompanying video features eight 11-minute cooking shows with cohost Poppy Morgan. The shows demonstrate recipes in the folder as well as Chicken Marsala, Prawns Amaretto, Salad Longhi, and Shrimp Longhi.

Appetizers in August

Chile enthusiasts may win a $25 gift certificate from It's Chili in Hawaii by submitting the best appetizer recipe containing at least one product purchased from It's Chili in Hawaii.

Recipes become the property of the boutique store and will not be returned. Recipes may be printed in the store's recipe booklet, but only one gift certificate will be awarded.

When submitting recipes, include the name of dish, ingredient list, detailed cooking instructions, number of servings, plus your name, address and phone number.

The deadline for entries is Aug. 31 and the judges' decision is final. It's Chili in Hawaii is at 2080 S. King St. Suite 105. Call 945-7070 for more information.



Dishes from Centre Court Restaurant

Executive Chef Dwayne Makalena makes his presentation at Lyon Arboretum's Upstairs Classroom, from 9:30 to 11:45 a.m. Tuesday. The fee is $22; $12 for senior citizens. The class is limited to 20 people. Call 988-7378 to register.



Agriculture and food via the tube

Those interested in the link between food and agriculture can tune into "Focus on Agriculture," a University of Hawai'i-Hilo televised course, which begins airing Aug. 29.

The course, Ag 194K, will acquaint students with the many aspects of diversified agriculture in Hawaii, with Big Island guest chefs - such as Sus Nakagawa of the Seaside Restaurant, Sandy Yokomizo of Uncle Billy's Restaurant and Rick Maiava of Ken's House of Pancakes - demonstrating use of local produce and meats.

Classes will meet 7 to 8:30 p.m. Thursday evenings, Aug. 29 through Dec. 12 in the school's Mookini Library Television Studio, room 350. Home viewers will get their lessons via 'Olelo Cablevision on Oahu; Chronicle on Maui; Kauai Cablevision and Garden Isle Cablevision on Kauai; and Jones Space Link of Hawaii and Sun Cablevision of Hawaii on the Big Island.
