Luscious treats make Valentine's Day sweet

Valentine's Day is on Sunday, so here are recipes sure to please every sweet tooth.

The Chocolate Tofu Mousse Pie can be served in slices, or in individual serving cups or parfait glasses without the crust. Garnish it with fresh strawberries or raspberries and a sprig of mint, and you'll have a fancy-looking, delicious dessert. Bake up a batch of the Decadently Delicious Blondie Brownies as an alternative to chocolate. It even has chocolate lovers raving.

 

CHOCOLATE TOFU MOUSSE PIE

2 packages (12.3 ounces each) Mori-Nu extra-firm silken tofu
1 teaspoon vanilla
Pinch of salt
1 package (12 ounces) semisweet chocolate chips
1 (9-inch) graham cracker pie crust
Fresh fruits for garnish

Place tofu, vanilla and salt in food processor or blender. Melt chocolate chips in double boiler or microwave oven (on medium power for 3 to 4 minutes, stirring between each minute). Add melted chocolate to other ingredients in processor and blend until smooth.

Pour into pie crust; refrigerate at least 1 hour. Serves 8.

DECADENTLY DELICIOUS BLONDIE BROWNIES

3 cups cake flour
1 tablespoon baking powder
3/4 teaspoon salt
1-1/2 cups (3 sticks) unsalted butter
3 cups packed light brown sugar
3 large eggs
1 tablespoon vanilla

» Optional:
3 cups add-ins, such as dried fruits (cranberries, cherries, or chopped apricots); coarsely chopped nuts (pecans, macadamia nuts, walnuts, almonds, hazelnuts); semisweet, bittersweet or white chocolate chips

Preheat oven to 325 degrees. Spray a 13-by-9-inch pan with vegetable cooking spray. Fit a piece of foil into pan, allowing enough foil to hang over edges (which will aid in removing brownies from pan); spray foil with cooking spray.

In small bowl, whisk flour, baking powder and salt.

In large saucepan, heat butter and brown sugar until bubbling hot; remove from heat.

In small bowl, whisk eggs and vanilla; slowly whisk eggs into butter mixture. Stir in flour mixture and optional add-ins (if adding chocolate, be sure batter is cooled slightly). Pour into prepared pan; bake until set, about 45 minutes.

Remove from oven and let cool 5 minutes. Pull blondies from pan using foil handles, and set on a wire rack. Cool completely before cutting. Yields 24 squares.
