Give office organizers just dessert

Next Wednesday is Administrative Professionals' Day, which pays tribute to that special person in the workplace who keeps everyone and everything in working order. Show your appreciation by making a dessert to celebrate.

We adapted a recipe called Mandarin Sour Cream Dessert using fresh strawberries in place of canned mandarin oranges. We also used frozen strawberries—the syrup replaces the mandarin orange juice of the original recipe.

To lighten it up, we tested it with Smart Balance 50/50 Butter Blend. This product, made for baking and cooking, has 28 percent less saturated fat than butter and is free of trans fat. The results were excellent!

The Apple Bread Pudding has also been adapted by using candied nuts, skim milk and the Smart Balance 50/50 Butter Blend.

 

Strawberry Sour Cream Dessert

               

     

 


        » Crust:
        2 cups flour
        1/4 cup powdered sugar
        1 cup butter or Smart Balance 50/50 Butter Blend (stick form)
        1 cup chopped pecans or macadamia nuts, toasted (optional)

» Filling:
        3 cups light sour cream
        1 tablespoon sugar
        2 small boxes instant vanilla pudding and pie filling
        1 container (16 ounces) frozen sweetened strawberries, thawed
        1/2 pound fresh strawberries, sliced

       

» Topping:
        1 container (8 ounces) frozen light whipped topping (such as Cool Whip), thawed
        1/2 cups chopped pecans or macadamia nuts, toasted (optional)
        1/2 pound fresh strawberries, sliced

       

 

       

Preheat oven to 375 degrees.

In a large bowl, mix flour and sugar. Cut butter into flour mixture until it looks like coarse crumbs. Gently mix in nuts.

Pour mixture into 9-by-13-inch pan, shake to distribute crumbs evenly; lightly press down.

Bake 20 minutes or until golden brown; cool.

To make filling: Combine sour cream, sugar, pudding mix and frozen strawberries. Fold in fresh strawberries. Pour onto cooled crust; chill 15 minutes.

Spread with whipped topping. Sprinkle with nuts and lay strawberries on top. Serves 20.

Apple Bread Pudding

               

     

 


        1 pound loaf French bread, in 1/2-inch slices
        5 tablespoons butter or Smart Balance 50/50 Butter Blend (sticks)
        1 can (21 ounces) apple pie filling
        1/2 cup chopped nuts or chopped candied nuts
        1/2 cup raisins
        4 eggs, beaten
        4 cups skim milk
        1/2 cup sugar
        1/4 cup brown sugar
        1/4 teaspoon salt
        1 teaspoon vanilla
        1/2 teaspoon lemon extract

» Topping:
        1/3 cup brown sugar
        1/2 cup chopped nuts or chopped candied nuts
        1 cup buttermilk baking mix (such as Bisquick)
        3 tablespoons butter or Smart Balance Butter Blend (stick form)

       

 

       

Preheat oven to 350 degrees. Butter slices of bread and place in 9-by-13-inch baking pan. Spread pie filling over bread. Top with nuts and raisins.

Combine eggs, milk, sugar, brown sugar, salt, vanilla and lemon extract; pour over bread, pressing down to soak bread.

To make topping: Combine baking mix, nuts, and brown sugar; cut in butter. Sprinkle over bread mix.

Bake 45 to 60 minutes, until knife inserted in center comes out clean. Serves 24.
